Valentines steak

Sooo... valentine. Yes it is a struggle every year, will you have a date, will you celebrate the occasion, will you dine out or cook something yourself. Well forget all that stuff, whether it is valentine or not, whether you are female or male this dish is excellent for every occasion! A simple, yet perfectly cooked steak with some veggie, oven-baked frites, guacamole and a green salad. Just a dish you would get served in a small romanatic French Bistro. You can set the scene yourself, set up a table for two, some fancy plates and maybe even a nice bottle of wine and some scented candles. Even if your dinner fails your date will surely appreciate the attempt. However, I am here to make sure you won't need to worry. Start by preheating the oven to 200 degree. Cut the kohlrabi into frites. I like those small French frites but you could also choose the Belgian style frites, these are slightly thicker and more square. Season them with a sprinkle of paprika powder and a pinch of sea salt. Spread them on a baking sheet and roast in the oven for 25 minutes or until you see them getting golden brown and crisp. Now prepare the dipping sauce. Agreed this is not very French but I just adore guacamole! It is so creamy, decadent and divine. It matches with the juicy steak and the spicy frites. It contains many good fats and omega and has a beautiful silky texture. Mix the smashed avocado with some yogurt to give it some moisture, a pinch of chili flakes, some fragrant cilantro, a squeeze of lime juice and a generous pinch of sea salt. Carefully mix everything up and set in the fridge until you are ready to serve. Now quickly prepare the greens by wilthing the spinach and the samphire with a pinch of sea salt and lemon pepper. Take the pan of the heat and allow to cool for a moment. Now the piece della resistance! Heat a grilling pan until it's really hot. Season the steak with the same spices you have just been using. Some extra chili flakes are optional. Heat kickstarts the mood due to the capsicum in the pepper. Making it a guaranteed exciting evening (wink wink). Grill the steak on both sides for 5 to 6 minutes. This will cook it medium rare, if you prefer it somewhat under opt for 4 minutes and if you want it well done give it 7 minutes. Once it has been grilled let it rest in a piece of tin foil for an equal amount of time. Allowing the meat to rest will ensure the juice will stay within the meat itself once you cut it into thin slices. So now everything is ready you can check the frites and plate them either on the side or on the plate with the steak and the greens. Add the dipping sauce and a final garnish of cilantro. Now depending on the rest of your evening you can either serve it like mentioned before or simply cuddle up in front of the television and binge watch your favorite series.
