Unusual oven-bake

Due to circumstances I recently did not have time to check
the fridge. I was running around and so focused on a busy schedule I was not
able to cook. So when I dared to open the fridge I was shocked to see all kinds
of vegetables screaming at me to be used. This way the usual combination of veggies
arose in my mind; some florets of broccoli and orange and red bell peppers,
half a of a butternut pumpkin and a bit of chive wrapped in a few napkins. Furthermore
I still had half a tin the cottage cheese left and some thinly sliced meat which
I normally eat as breakfast. However I was so tired that I could not make the
effort to prepare a fancy meal, so the true student in my said 'just cut it
into random bits and pieces, throw on the cheese and bake it in the oven!' So
this is exactly what I did. Start by chopping up the pumpkin, broccoli and bell
peppers into bite size chunks. Spread them evenly out in an oven tray so they
all will roast equally. Preheat the oven at 200 degree while you season the
cottage cheese. Chops the chives, add a bit of lemon zest, some wakame (I'm
trying to reduce my salt intake so seaweed, having a naturally salt taste, are
a perfect replacement!) and a pinch of green pepper for a fresh kick. Spread
the cottage cheese mixture over the veggies and tear the beef into small pieces
and sprinkle the across the tray. Place the oven bake in the preheated oven and
bake for 30 minutes while you can kick back and RELAX! The oven will work its
magic so you won't have to worry about washing pans or burning food. It is an excellent
meal of have up your sleeve if you don' t feel like cooking but still want
something comforting and warm
Ingredients: 200 grams of pumpkin, 150 grams Broccoli, 150 grams of mixed bell pepper, 100 grams of cottage cheese, 50 grams of smoked beef, 10 grams of chive, one teaspoon of lemon zest, 1 teaspoon of wakame flakes, 1 teaspoon of green pepper
