Smart Student Solutions

Sometimes (okay, often) you have run out of budget yet the month the not over for a couple of days. As a student you turn to your pantry and fridge to see how some creative cooking will help you get through that final time. Love your left overs and staples and you will savour the moment when your student allowance is allocated just that bit extra! I, myself stumble across these kinds of situations more then I wish to (unfortunately). This time I did not have anything left in the fridge yet I had just cleaned it out so my pantry was the only thing I had left. Recently I had stocked up on passata di pommodori and sauerkraut. Furthermore I had a dozen of eggs left due to a small miscalculation and a couple of slices of smoked beef which I normally use as a topping for my sandwich. Out of options I decided to join all of my left overs together and add some extra spices and herbs in an attempt to make it eatable. And it actually turned out to be quite tasty! Start by sautéing the tomato paste for 2 minutes before adding the tanned tomatoes to the cooking pan to a simmer and add some sweet, smoked paprika powder, the drained sauerkraut and whatever fresh herbs you have left. Let it simmer for quite a while so the sauerkraut will soften and you have time to prepare the omelette. I only use the egg whites as my stomach can handle those better. Shred the beef into small pieces and add them to your egg. Sprinkle the sesame seeds of top for a nice little crunch and put a lid over the pan so it will cook quicker. Once your omelette is ready to be flipped after 10 minutes or so use the lid to flip the egg. Add the rest of the seasoning on the other side and bake for another 5 minutes. Once the omelette is all set, slide it onto a chopping board and cut it into smaller pieces and mix through the sauerkraut tomato soup. Sprinkle over some extra bit of cilantro and seasoning and scoop it straight out of the pan like a true student (no extra dishes, yippie!)
Ingredients: 350 gram of chopped tomatoes, 250 grams of sauerkraut, 5 egg whites, 50 grams of smoked beef, 15 grams of fresh cilantro, 1 tablespoons of tomato paste, 1 tablespoon of wasabi mix, 1 teaspoon of sweet paprika, 1 teaspoon of dried seaweed, 1 teaspoon of sesame seeds
