Simple seafood salad

Often salads are considered a big hurdle in preparation,
taking more time to toss together as to consume. But they don' t always have to
be complicated! Personally, I always have some left-overs of yesterday's dinner.
Some pre-cut but unused veggies, a hand of fish of meat or bits of sauce. When
you are in a struggle to get things done during early morning you simply cannot
always find the time to prep from scratch. This is an excellent situation where
you can throw all sorts of left-overs in a container and have your salad
on-the-go in a flash. Start by using different kinds of lettuce as a base, you
can also buy a bunch of tricolored lettuce (different kinds packed together
with a big lump of earth and the roots still attached) or going really student-like
an buying a sack of pre-washed lettuce. Next search your fridge for any kinds
of veggies, get creative and make exciting flavour- and texture combinations. I
had prepared a Chinese stir-fry and Italian pasta earlier that week so I threw
in all veggies I decided not to use earlier on; Bell pepper mix, cabbage,
carrot and onion. Then I choose some prawns from the stir fry and chili sauce.
The prawns were already pre-cooked so they were super easy as they did not need
any additional preparation. So a salad made within 5 minutes! Sometimes you are
allowed to cheat because you simply cannot be a culinary chef every day. I find
I really love a salad during the lunch instead of bread or wraps. In the course
of time I have made so many different kinds of salads, especially with sea
foods. Therefore I am currently writing a special series which highlights all
different kinds of lunch salads with fish to showcase their versatility. I plan
on writing a set of series where I take on dish and tweak it in alternating
ways. I will post these after the weekends to provide inspiration for next

Ingredients: 100 gram of mixed lettuce, 100 grams of prawns, 70 grams of red, yellow and green bell peppers, 50 gram of Chinese cabbage, 40 grams of carrot, 40 grams of red onion, 2 tablespoons of chili sauce
