Marinated zucchini and tofu stir-fry

This easy, fresh stir-fry is such a nice meal to make if you have a busy night ahead. It is fresh yet comforting and done in no time. Slightly sweet due to the marinated tofu and carrots but somewhat more complex thanks to the cilantro and yuzu as seasonings. Start by marinating the tofu you can easily do this in the morning when you get up. The earlier you get this done, the more flavorful the tofu will become. Once you have adding the soy sauce and sweet chilli give it a good rub and set in the fridge. When you want to start cooking begin by cutting the zucchini and carrots into bite size chunks. Quarter them and slice into 1 centimeter pieces. Boil 250 ml of water and cook the rice for 10 to 12 minutes. Once it has cooked allow the rice to sit and steam dry for another 10 minutes. Heat a frying pan or wok and start with the vegetables. After 4 minutes add the tofu and fry for another 4 minutes while constantly stirring. Now it's time to add the rice and mix everything up. You can either choose to serve it separately or like I do. I prefer it this way so the rice has some extra time to soak up all the flavours and get a crispy exterior. Give it a final 2 minutes before transferring it on your plate and garnishing it with some freshly chopped cilantro, yuzu and a pinch of sea salt. You can eat it the easy way, with a spoon, medium with a fork and knife or expert level with cho sticks. The kitchen will be filled with an amazing fragrant smell making your tummy hungry for sure!
