Freaking Fancy Frittata

Buying new equipment calls for a great dish to try it out. A
frittata is a Mexican egg dish with onion and potato. Stubborn as I am I tweaked
the recipe to my taste. Replacing the egg with egg whites, potato with sweet
potato and added loads of veggies, ham, and spices. This version is healthy,
tasty and surprisingly filling due to all the proteins. Spicing up your food
with chili, cayenne and more kinds or peppers is also very good for you as they
are considered to boost your metabolism, contain many serotonin( boosting your
feel-good hormone production ) and is reduces the risk of a heart attack. Throwing
over a hand of freshly chopped spinach never hurt anyone and provides some
fresh green colour to the plate. The handle of the pan is detachable so you can
choose to first bake the potatoes and ham in the skillet. Then turn down the
gas throw in the remaining veggies, crack over the eggs and simple shove the
dish in the oven for the eggs to just set and become nice and soft. It will
take approximately 15 minutes for the egg to cook if you have a trustworthy
pre-heated oven at around 200 degree. The pan is a real life-saver as it is
multipurpose to the max and stores easily.
Ingredients: egg white, sweet potato, bell pepper, zucchini, spinach, ham, Cajun spices, smoked paprika pepper, chili pepper, sea salt.
