Valentine fish

This dish is something I would very much recommend as a somewhat some fancy, Valentines dish to surprise and spoil your significant other. This recipe is low carb, and high in good quality fats which means it is a light dinner yet healthy and really filling. Yet it won't make you feel overly stuffed so you still have the joy and excitement for the other half of you 'entertainment ' (really I mentioned dessert!). Start by preparing the cauliflower, broccoli rice by pulsing the florets in a kitchen machine for sessions of 10 seconds each. This will give you maximum control of the grain size and texture. Next make the vinaigrette by mixing the lemon juice, ginger, sesame oil and sea salt. Set the small cup aside and focus on chopping the veggies. For this recipe is only used the stalks of the spinach because they give a better crunch to the salad and will blend better with the samphire. Cut the avocado Brunoise as a beautiful garnish. Sprinkle with a bit of extra lemon juice to prevent it from colouring. Now comes the cooking component: heat a frying pan and a start sautéing the vegetable rice. At the same time heat a grilling pan to search the fresh tuna. This will only require baking the tuna for 2 minutes on each side. The fish will get those beautiful grilling marks but stay moist and pink in the centre. Now all the different components are prepared you can assembling the dish. I prefer a deep dish as it makes eating the dinner much easier! Start with the leave greens as a Base. Sprinkle the fake rice on top and drizzle most of the dressing over. Now get fancy and place the avocado cubes in and around the salad and add a hand of freshly chopped cilantro. This herb matches so well with the saltiness from the samphire. Finally place the tuna on top and garnish with a final seasoning of the leftover dressing and toasted sesame seeds. The little crunch from the seeds will really elevate the dish and the dressing will add a final burst of freshness. You can be so proud of this dish, I am sure your date will truly appreciate your culinair you effort! And it was not even that difficult to achieve. Double win and a happy valentine.

Ingredients: 125 grams of tuna, 100 grams of wild spinach, 100 grams of cauliflower, 100 grams of broccoli, 75 grams of avocado, 50 grams of samphire, 15 grams of green cilantro, 1 tablespoon of sesame seeds, 1 tablespoon of fresh ginger, 1 teaspoon of lemon juice, 1 teaspoon of sesame oil, 1 teaspoon of smoked sea salt
