Twice a spicy chick!

This is a simple midweek dinner which doesn't require a lot of time yet is prepared with fresh ingredients, super healthy and very delicious. Start by heating a wok pan over a high heat. Once the pan is hot enough add the chickpeas, dry roasting these will make them crunchy and almost like a snack. Once most of the peas have puffed add the chicken, chopped into cubes. Season everything with a pre-made curry seasoning. The green paste has lost of ginger, lemon grass and cilantro which make it really fragrant. Add the roughly chopped spinach the give a quick toss. Use the avocado cubes as little bits of creaminess when you plate the dish. These will slightly melt and add a wonderful texture. Finally sprinkle over some lime juice and sea salt and dinner is done! Fast, fresh and simple right.

Ingredients: 200 grams of spinach, 125 grams of chicken, 100 grams of chickpeas, 100 grams of avocado, 15 grams of fresh cilantro, 1 teaspoon of lime juice, 1 teaspoon of green curry, 1 teaspoon of sea salt
