Turkey in a blanket

Poultry is such a versatile kind of meat. You can roast a whole bird, make soup out of the off cuts, simply wok some sliced breast or Bbq marinated wings. This time I choose to wrap up a luxury cut of Turkey breast in some smoked ham in grill it in the oven. By wrapping it you are creating a protective layer which ensures the meat will stay beautifully tender and moist yet cook all the way through. Served on a bed of spiced cauliflower couscous with roasted cherry tomatoes, sautéed spinach and small, creamy chunks of avocado. A combination of all my favourite vegetables! Start by preheating the oven. Rub the chicken with the paprika spices and sprinkle with some sea salt. Wrap the slices of ham around the turkey and transfer it on a baking tray. Add the tomatoes and return to the oven. Turn on the grill and let the oven do its job for about 15 minutes. Now you can start with the preparation of the vegetables. If you are in a hurry use the food processor to grind up the cauliflower florets into a grain like texture. Wok the fake couscous for 5 minutes with a tablespoon of Italian seasoning. This normally is a blend of various dried herbs like oregano and thyme mixed with cayenne and paprika powder. Add the roughly chopped spinach the final 2 minutes and sautéed the stir fry on a medium high heat. Assemble the dish by starting with a layer of the stir fry. Sprinkle over the roasted and cut cherry tomatoes and the brunoise cut avocado. Place the meat of top and garnish everything with a hand of freshly chopped cilantro and some sesame seeds. As the spices are very mild this dinner is also excellent to serve to kids. The will eat plenty of vegetables this way and the crunchy, grilled ham will remind them of chicken with bacon. You can opt to serve the dish with a little bit of ketchup but I don't find it necesarry. A fairly easy dinner but delicious and very healthy.

Ingredients:150 grams of cauliflower, 150 grams of spinach, 125 grams of Turkey, 100 grams of cherry tomatoes, 75 grams of avocado, 25 gram of smoked ham, 15 grams of fresh cilantro, 1 tablespoon of Italian seasoning mix, 1 teaspoon of paprika pepper, 1 teaspoon of sesame seeds, 1 teaspoon of sea salt
