Salmon Surprise

(with crunchy, sweet skin!)

Salmon is probably the most popular piece of fish. A slightly more fatty kind as cod and full of omega 3 and 6 fats. Most people tend to eat salmon just a tad overcooked because they are afraid that if they eat it too raw they might end up with food poisoning. A waste, because salmon is most enjoyed, flavourful and tender when cooked blushing pink and just done. If you buy a good quality piece you do not have to be scared of undercooked your fish. Think of ceviche for example, that is a dish of thinly sliced raw fish, lightly marinated with an acid. Salmon is a quite luxurious kind of fish so it is important to treat it with respect. Furthermore it is a very 'fishy' fish, meaning that it has a strong flavour of itself. Due to this is it able to handle more outspoken flavours than a white meat fish such as cod. Often, when you buy salmon in the supermarket the skin will be already removed. While this is an essential part of the salmon that is crucial in order for a good preparation. What most professional cooks like to do is cooking the filet 4 to 5 minutes skin side down in a hot cooking- or grilling pan then flipping it and cooking it for an additional minute. This way the skin will turn into a crispy crackling that will add a lovely texture to contrast and flaky fish meat. If you rub the skin in with a bit of walnut oil and a touch of honey it will become even more delicious and caramelize. Taking some extra care of the salmon makes the veggies a secondary component in this meal. Yet They Still Require Some Love and care. I recommend making it a juicy mix of Mediterranean style vegetables; tomatoes, bell pepper, onion, all kinds of healthy additions that blend together well. Sautéing everything for 15 minutes and add a teaspoon of tomato paste if you find the mix is not moist enough. Serve the veggies in a big bowl and place the salmon on top. You can flake it with your fingers and gently spoon it through the dish. Take the skin and scatter it over your dinner. If you do not like dirty hands you will only need a spoon, however it is even more fun to scoop out your bowl with some freshly toasted bruschetta. Less dishes and more yum!

Ingredients: 150 grams of romanesco, 125 grams of salmon, 75 grams of bell peppers, 60 grams of tomatoes, 40 grams of onion, 15 grams of fresh parsley 2 cloves of garlic, 1 tablespoon of balsamic vinegar, 1 teaspoon of lemon juice, 1 teaspoon of walnut oil, 1 teaspoon of honey, 1 teaspoon of chili flakes, 1 teaspoon of sea salt
