Toastie blt (beef, lettuce, tomato)

Sometimes weird, unexpected leftover combinations make up the best toasties. For example this lunch; as I had dinner with my family yesterday and made too much (as usual). As I never want to throw out leftovers (student habits) I figured I would put everything on a sandwich and make a panini of it! As yesterday's dinner was roast beef with a simple salad and a dressing with pesto it is easy to make up a meal. Start with two slices of healthy, multi-seed bread, choose a kind you prefer best. I love the kind of bread with as many seeds and grains In It, As It Makes The meal more Filling And Satisfying. Layer both sides with the sliced beef, add a layer of halved cherry tomatoes, spread on a generous amount of pesto and finally add the shredded lettuce and fresh basil. Try to flip the slices on top of each other as quick as possible, this will require some skills. Place the sandwich under a preheated grill and wait until the bread is golden brown and toasted. Use the dressing as a dipping sauce and add some extra basil and pesto if you like. Slice the Toastie in half and you are done in a flash! Recycling 2.0 and tasty as hell.

Ingredients: 2 slices of Multikorn bread, 50 grams of roast beef, 50 grams of cherry tomatoes, 40 grams of romaine lettuce, 40 grams of plain yoghurt, 15 grams of fresh basil, 1 tablespoon of pesto, 1 sea salt.
