Tiramisu Delight

Searching for a tasty, decadent dessert during the these festive times? Want to make a special treat but not sure if you can handle it after a filling 3 course menu? Don't worry! I've made a version that incorporated a good doses of caffeine and Cacao but skips on the excessive calories. By cutting down on the calories you won't need to feel any guilt. Replacing the full fat cream and egg yolks for Ricotta and beaten egg whites is a perfect way to go light. But don't skip on flavour! Make sure you use some super strong espresso coffee and good quality Cacao powder. If you want to make the dessert alcohol feel free to replace it amaretto which non-alcoholic coffee flavouring like almond or hazelnut. However I prefect mine with a dash of liquor (maybe somewhat some than the recipe prescribes). Sometimes I like to add a little twist to the traditional recipe. For example some crushed nuts or grated coconut. This time I choose to give it a tropical touch. Start by whipping up the egg whites. Carefully fold the coconut alcohol and the Ricotta through the fluffy egg whites. Make a cup of really strong espresso and pour in the amaretto. You may need to make some extra as it depends on the amount of moisture the fingers will soak up. Assemble the dessert the alternating between layers of cream of cookies. Finish with a dusting of Cacao and garnish with a generous amount of grated coconut. This way your guests will know what to expect when they eat this dish. Count this portion as a one person portion. It is best to have some extra than to fight the last bite!

Ingredients: 6 lady finger, 2 eggs whites, 1 cup of really strong espresso, 75 grams of Ricotta, 1 tablespoon of amaretto, 1 tablespoon of coconut liquor, 1 tablespoon of Cacao, 1 tablespoon of grated coconut
