Portable pleasure

Making a salad on the go can be such a money saver! Normally these easily cost up to 10 euros if you buy a pre made salad somewhere in the supermarket. Often it is not very fresh and has some nasty dressing. Making your own is super easy and you can prep ahead by making a big batch to last you all week. I normally use leftovers from dinner as it is a perfect way to clean my student fridge before heading home for the weekends. Start by slicing any kinds of lettuce you like to mix; spinach, ice berg lettuce, chard, you name it. Mix it with a selection of veggies. I like cauliflower couscous, sprouts, cucumber and avocado. It is a match made in heaven; a little crunch, some creaminess, a bit of refreshment and a playful texture throughout your lunch. Sprinkle over some seasoning, choose to go spicy with wasabi and cilantro or sweet with some honey and almonds. Serve the dressing in a separate container. It will leave the salad fresh and crisp until you eat it. A fabulous, fancy lunch which will make your fellow students jealous!

Ingredients: 100 grams of spinach, 100 grams of grated cauliflower, 75 grams of cucumber cubes, 75 grams of sprouts, 75 grams of avocado, 15 grams of cilantro, 15 ml of ginger-lime dressing, 1 tablespoon of wasabi seasoning mix
