Mushroom tortellini with prawns and sage

When you want to impress a date with a fancy meal but would like to play it safe this is a really good dish to turn to. A fresh, light pasta meal with seafood and fresh veggies. Leave a bit of room for a romantic dessert, for example a Ben and Jerry's pint with a spoons or simply fresh strawberries with whipped cream. But first the recipe! Start by cutting up the spinach and halving the cherry potatoes. Bring a liter of water to a boil and season with a generous amount of salt. Cook the pasta for 4 minutes or until they start floating towards the surface. Heat a large sauté pan and start with the prawns, add the finely chopped sage, chili flakes and lemon zest and stir fry for 2 minutes. Add the spinach, tomatoes, pasta and a cup of cooking liquid and stir until the wild spinach has wintered. This will take 2 minutes or so. Serve the pasta in some fancy, big pasta plates and season with a pinch of salt if needed. You will be amazed how appetising you can make a dish look in just 15 minutes. This means more time to prep for your date and have a stress free evening. Enjoy!

Ingredients: lots of love, 125 grams of cherry tomatoes, 125 grams of wild spinach, 100 grams of prawns, 100 grams of fresh pasta, 15 grams of fresh sage leaves, 1 teaspoon of lemon zest, 1 teaspoon of chili flakes, 1 teaspoon of sea salt.
