Honestly happy with hassle back potatoes

(And a perfect medium rare steak with a mouth-watering mushroom sauce)

These semi potatoes chips are always a big hit with my family. Luckily for me because they are easy to prepare with some little tricks, only require a loving rub and a fair amount of time to roast in the oven. The trick with these potatoes is to slice them as deep as you can without breaking the layer apart. What I like to do is placing two chopsticks underneath and cutting the potatoes until I hit the chopsticks. This way I know they will hold together nicely. It is key to cut them open quite far so the marinade can soak into the potatoes and will make them extra flavourful and crispy. Mix the olive oil with the Italian seasoning and a pinch of sea salt. Bake them in a preheated oven at 220 degree for around 45 minutes (depending on their size). Check every ten minutes to see if the chips are turning golden brown and crunchy. While the hassle back potatoes are baking in the oven start preparing the sauce for the dish. A luscious, creamy mushroom sauce will be delicious with the potatoes as well as your steak. Start by cutting up some mushrooms and sautéing these is a nob of butter with the curry spices. After five minutes add the mustard, lemon zest, basil and cooking crème. Turn the heat up and let the sauce simmer away and allow the flavours blend. Preheat the grilling pan during the last ten minutes of the baking time for the potatoes. Grill the steak for five minutes and both sides if you want the medium rare. Wrap it in some tin foil with a pinch of lemon pepper and allow it the rest for a few minutes. Cut the steak into thin slices and serve while the crispy potatoes. Drizzle the sauce all over the plate so you can use it as a dipping sauce as well. My brother also loves an extra bowl of mushroom sauce so he can smother his potatoes with love. Ah well, every once in a while we may enjoy a guilty pleasure. (Shh don't tell him this is actually a fairly healthy dish as potatoes are considered to be veggies, there are extra veggies in the sauce and steak is a really lean cut of beef!)

Ingredients: 200 grams of potatoes, 125 grams of steak, 100 grams of mushroom, 70 ml of low-fat cooking crème, 15 grams of fresh basil, 1 teaspoon of mustard,1 teaspoon of butter, 1 teaspoon of lemon zest, 1 teaspoon of curry madras, 1 teaspoon of Italian seasoning, 1 teaspoon of olive oil, teaspoon of lemon pepper, 1 teaspoon of sea salt

Serving suggestion: add some broccoli for extra veggies and a good glass of dry, red wine if you want to make it extra fancy.
