Green Goddess Wrap

These wraps are great as a Luxe lunch and eat excellent on the go. These green wraps are also vegan, filling and healthy! You can stuff them with any leftovers from yesterday's dinner. Shredded chicken, bits of salad, any kind of herbs or spices, you name it. I always like to add some avocado as it is rich, creamy and super delicious . It leaves the need to add a sauce, making it way less messy to eat. Start by cutting up all the veggies, finely slice the spinach and the lettuce. Cut the cucumber into long strokes and slice the avocado into thin parts. Immediately season the avocado with the yuzu to prevent it from browning. This adds a fresh, lightly sweet and sour flavour which complements the decadent vegetable. Chop the cilantro and mix everything together into a large salad. Season the greens with wasabi, sesame seeds and sea salt. Fill the wraps with the stuffing and neatly fold the wraps so you won't get all dirty when unpacking them. Wrap your portable lunch in some aluminium foil and make all your fellow students (or co-workers) jealous! Results guaranteed! You could also choose to warm up the wraps first and eat them as dinner. Tip: add a bit of grated cheese when you heat up the wraps!
