Curry cravings

Sometimes you don't want a dish which requires a fork and a knife. You just want something warm, comforting and spoonable. Curry are the perfect solution for these kind of struggles. You can mix so many veggies and meat, a good way to get rid of your leftovers. For this curry I wanted to use some Colourful vegetables and a tender piece of pork. This kind of meat only requires very little cooking time. Start by sautéing a finely chopped onion, the Brunoised Carrots And The Spices on a medium heat. Let it soften for a couple of minutes before adding the bell peppers, pumpkin, lupine and the meat. Turn up the heat and stir fry for an additional 5 minutes on a high heat. Allow the pork to caramelise on the outside before adding the final ingredients. Turn the heat down and let the urry simmer with the coconut milk and tomatoes. After a final 5 minutes the dish will be done and it will smell delicious. All it now requires is a final sprinkle of fresh basil on you are ready to attack the plate with a spoon. The tender pork lion will melt in your mouth and the warm spices of the coriander, ginger and lemon grass match really well with the sweet taste of the pumpkin and carrot. A dish which will make anyone smile dur9ng these cold winter days.

Ingredients: 100 grams of lupine, 100 grams pork lion, 75 grams of bell peppers, 60 grams of cherry tomatoes, 60 grams of carrots, 60 grams of onion, 50 grams of pumpkin, 50 grams of spinach, 50 ml of coconut milk, 15 grams of fresh basil, 1 tablespoon of curry madras
