Crazy Cod

Normally I do not use fresh fish for my stir-fries because it is quite expensive. However this cod I stumbled upon while shopping at the local market was super cheap! I have to admit, it were not the prettier looking cuts but this was the case because it were the left-over from the filets. Really who cares if you don' t serve a perfectly looking filet, after all it is all about the taste. Even more so if you choose to flake the filet afterwards anyway. Because with a fresh fish like this one a recommend preparing it separately from the rest of the dish on spooning it through at the last moment. This will prevent the fish from overcooking and keep the fish meat pale and juicy. This dish was a big horde for me because it had not cooked it in a very long time. During my restrictive period I did not allow myself to eat certain kinds of food so I enjoyed this meal extra. It is quite simple; baked, pre-boiled small potatoes, green beans, juicy tomatoes, some wilted fresh spinach, cilantro, curry madras, a splash of coconut milk and a pinch of chili flakes. I always love coconut milk as it is lactose free and adds a lovely tropical taste to the dish. If you can get your hands on some fresh pineapple I would really recommend using it in your dish. Unfortunately there were no ripe fruits left last market as I arrived pretty late. The dish is really Caribbean inspired however I could not find long beans ( a Surinamese kind of vegetable) but if you are able to switch it for the green beans, it will make the dish even more authentic. But green beans are a perfectly agreeable alternative. This dish is a good student meal as it is not that much prep work, only uses one pan and calls for cheap ingredients. Start by baking the potato bits for a few minutes, you can either choose sweet potato or opt for plain ones. Secondly add the chopped beans, tomatoes, onion and (optional) fruits. Allow it to soften for a few minutes before stirring through the coconut milk, curry blend and some sea salt. Bring it to a boil and turn down the gas. Add some hands of chopped spinach and the flaked cod. Finally garnish the dish with some extra lime zest, juice and an extra hand of freshly chopped cilantro. If you prepare this in a shared kitchen be prepared to receive jealous looks as it smells amazing(or make a really big pan and invite everyone). Freeze any left-overs you have left, however don' t expect any!
