Sweet Chicory salad with carrot, crab and a fancy vinaigrette

I was really excited to try this new recipe I came up with. Especially because I'm the only one in the family who likes chicory. But I wanted to try to so badly I convinced the rest to at least try it. Luckily they loved it! Ad with a good mandoline this salad is done in a flash. Start by cutting the chicory in thin chunks. This will be the Base of the salad. Julienne the apple and slice the carrots. Toss these through the chicory. take the Surimi, a.k.a. fake, student crab and shred these into strings. Prepare a simple vinaigrette by mixing the olive oil, lime juice, lime Zest and grated ginger. Sprinkle it on top of the salad right before serving. Finally garnish the dish with a little cilantro and it's done. Colourful and healthy yet a surprising combination.

Ingredients: 250 grams of carrot, 250 grams of chicory, 150 gram of Surimi, 60 grams of apple, 15 grams of fresh cilantro, 1 tablespoon of olive oil , 1 teaspoon of lime Zest, 1 teaspoon of lime juice, 1 teaspoon of grated ginger
