Cauliflower couscous with pumpkin and prawns

I have a date, (insert here all kinds of crazy words) now the question is; what
the hell do I serve? Shall I make an easy dish which is failsafe so I won' t
look like a fool. Or will I try to impress him by creating a Michelin star
recipe? After much fussing it seemed best to opt for the middle way. Making a
nice, delicious dish that does not require much preparation but is somewhat
more special due to the creative use of ingredients and the home-made spice
blend. Cauliflower couscous is to easy to make; simply chop up the cauliflower
very finely and season it with a blend of curry you like, I opted for curry
madras as it is not very hot (good to know if your date likes hot and spicy!).
To this I added lots of veggies I still had lying around, keeping it
Mediterranean with tomato, bell pepper, onion, garlic, zucchini and some extra
pumpkin. I love Ras el Hanout, a Arabian spice blend which may differ in
compound. However, often it consists of cardamom, cumin, garlic, cinnamon,
paprika pepper and many more delicious spices. Give the veggies some time to
soften and intensify. During the last few minutes of cooking add some prawns
(first check if your company likes seafood!). They are quick to prepare and
very healthy. They only need 3 minutes of cooking to stay tender and juicy. Now
normally I would really urge to add as many freshly chopped cilantro as you
like but unfortunately my date disgusts it so that was out of the question (or
ordering take-out). All in all this dish is done in 20 minutes, does not take
much fancy skills and eats nicely in a big bowl with a spoon. It is a light
meal so you don' t feel stuffed for the rest of the evening, providing you with
enough energy to enough your company all night!
Ingredients: cauliflower, pumpkin, bell pepper, tomato,
zucchini, carrot, onion, garlic cloves, ras el hanout, curry madras, chili
flakes, lemon zest, sea salt, (CILANTRO TRUST ME)
