Baked egg basket

Baked egg basket

This was an experiment which I have been wanting to try for quite a while now. However I did not have many faith it would taste that great. Not having tried warm avocado before and certainly not having considered it as breakfast. However the experiment was a huge success. It turned out to be a creamy, satisfying breakfast with does not only contain many good fats but also protein and fibres! Serve this bake on a slice of toast and you won't feel hungry all morning. Start by preheating the oven to 220 degree. Scoop out the pit of the avocado and cracker over the egg. I like to only use the egg whites as the yolks are something my tummy Tends to struggle with. Season with a pinch of taco seasoning if you like some extra spice. Shred the ham into pieces and place on the bottom of a small baking tray, carefully place the veggie on top. Make sure it won't fall over during the baking time. Leave on the oven and turn on the grill settings if your oven is that fancy. Allow The egg whites to just set, this will take probably 12 to 15 minutes. Meanwhile prepare a simple salad and toast some whole grain bread as a simple side dish. Once the avocado is done use a spoon to scoop out the creamy, delicious flesh and take a moment to enjoy your simple yet sophisticated breakfast bake.

Ingredients: a slice of toast, half an avocado, 50 grams of salad, 2 slices of ham, 1 eggs white, 1 tablespoon of taco seasoning (chili flakes, cayenne, paprika powder, sea salt)
