Asian bolognaise meatballs

A sinner Sunday dinner, the perfect comfort food for your tummy! While experimenting with a traditional Italian bolognaise Pasta I Stumbled upon an Asian twist which turned out to be a new family favourite. A warm, decadent tomato sauce with soy and cilantro. Served with flavourful, juicy meatballs with toasted coconut and peanuts all home made with a big tablespoon of love and egg noodles. Start by preparing the meatballs by cutting the onion and garlic in a blender. Next add the meat, bread crumbs, peanuts, egg, chili, coconut, 5 spice and sea salt. Pulse for a few short moments until all the ingredients have incorporated. Now it's time the use your hands! Shape the balls any size you like, I keep them about the size of a ping pong ball. This way you only have to cook them for 15 to 20 minutes and will still be able to keep them moist on the inside. Preheat a sauté pan and bake the meatballs golden brown on the outside. Now it is time to make the sauce. Randomly chop the tomatoes and add them to the pan along with the lemon grass and soy sauce. Turn down the heat and let everything simmer while you focus on the vegetables. Can you choose the cut them up and add them to the sauce but they add way more flavour if you grill them first. The eggplant and bell pepper will intensify and almost caramelise , this richness will add a beautiful depth of flavour to the pasta sauce. Simply grill them for 2 minutes on both sides and add them to the sauce. Now all there is left to do is cooking the noodles Al dente for about 8 minutes. Add the noodles to the sauce along with one cup of cooking liquid. The starch in the water will bind the sauce and the egg noodles will soak up all the flavours of the Asian sauce. Because I still had some cilantro in my kitchen window I used some of it as a garnish and sprinkle in to right before serving. This meal is perfectly eatable with just a spoon and fork. No knives needed and chop sticks would be somewhat too challenging.

Ingredients: 200 Of Tomatoes, 150 grams of meat, 100 grams bell peppers, 85 grams of egg noodles, 75 grams of eggplant, 40 grams of onion, 15 grams of fresh cilantro, 1 egg, 3 gloves of garlic, 1 tablespoon of grated coconut, 1 tablespoon of chopped peanuts, 1 tablespoon of sweet soy sauce, 1 tablespoon of breadcrumbs, 1 teaspoon of 5 spice, 1 teaspoon of lemon grass, 1 teaspoon of chili pepper, 1 teaspoon of sea salt
